A dual-purpose cultivar, this variety benefits from pollination by other cultivars such as Nocellara del Belice (for which it also pollinates), Nocellara Etnea, and Tonda Iblea. Giarraffa trees have a spreading growth habit, medium vigor, and a relatively sparse canopy. The drupes are covered with numerous large lenticels. They have a slightly symmetrical, elliptical shape and a very heavy weight (10-15g). The oil yield is low, producing a lightly fruity oil with hints of almond, artichoke, and tomato, and a sweet flavor with subtle spicy and bitter notes. These olives are also characterized by the easy separation of the pulp from the stone and their high pulp-to-stone ratio of 5.6.
