The Leucocarpa olive variety, formerly known as Leucolea, is characterized by fruits that turn white, almost ivory, as they ripen. In the Middle Ages, its oil was used to consecrate kings, popes, and emperors. The tree is moderately vigorous, with an upright growth habit. The crown is broad and spreading. The leaves are medium to large, elongated, and dark green. The oil obtained is very clear but flavorless, and the olives, even when pickled or salted, are always insipid.
